This is amazing. Amay-zing.
Make mayonnaise in 20 seconds.
And people? It works. It’s wonderful, easy and fast.
Last weekend I spent two HOURS trying, unsuccessfully, to make mayonnaise. I used a blender. I used hand mixers. And I used a food processor. The first batch was just a horrible mess. The second worked for about 15 minutes and until there was about a half-cup of oil in there, then it broke. The last batch? I’d been mixing for an HOUR. Adding oil drop by drop. It was thick and creamy and lovely, and I was so determined to be successful… then it broke, right before I’d added the last of the oil.
I was frustrated and pissed off. I read everything I could find on making mayonnaise. I called my grandma. I became obsessed.
Then I got an immersion blnder and made it in 20 seconds.
Fucking amazing.
But do you know what? I don’t even like mayonnaise. But I’m so glad to have finally done it, I was seriously and stupidly obsessed.

HHHAHAHAHAHAHA!!!!!!! I had to make a MASSIVE bowl (I think it was like 30 or 40 yolks…)of Mayonnaise, from scratch, HAND WIHPPING IT , while in Johnson & Wales Culinary School. Ummm, Let’s just say my arm has N-E-V-E-R been the same!! A couple key factors: eggs MUST be room temp,oil MUST be room temp, a dash of vinegar REALLY HELPS , as does a big pinch of sugar. You CAN use the blender to ‘fix’ a broken emulsion, but you often/should need to put a new yolk or two in and THEN strt pouring in the broken Emulsion SLOWLY… It re-emuls MOST of the time… (works GREAT for ‘broken’ cream soups too!! here’s link that’ll answer some ??? - Alex=== http://culinaryarts.about.com/od/saladdressings/ss/mayonnaise.htm ====
